An erect annual legume, Glycine max, known for its high protein and oil contents. Soybean (Glycine max, order Fabales) is one of the most significant commercial legume species. Native to China, soybean is widely cultivated for forage and for its seed, which is a major source of vegetable protein and oil for human and animal consumption and for industrial usage. Introduced from China into North America in 1765, soybean plants (Fig. 1) were first grown as a curiosity and then as a forage and soil-building crop. The valued portion of the plant is the seed (Fig. 2), which contains about 40% protein and 20% oil on a dry-weight basis.
