Vegetables that are prevalent in Asian cuisines, but less well known in Western diets. Oriental vegetables are very important in Asian countries, but are considered as minor crops in the United States and Europe. However, there has been an increased interest in these crops because of their unusual flavors and textures. In addition, many of these vegetables possess high nutritional values, especially with regard to their protein, vitamin, and mineral contents.
